Karen and her family are coming this week! I didn't want to have to worry about cooking a lot while they are here so I prepped several meals for the freezer! I figure we will be eating out too so we probably won't eat it all but I'm glad to know I have options. All I have to do is pull one out the night before and we will be in business! Some of the Japanese meals I thought the girls would like to help me make (yakisoba and gyoza) so I just prepped the meat.
List of meals I have either ready or ingredients to put together quickly.
-Lasagna roll ups
-Chicken enchilada casserole (cheese, lettuce, sour cream, avocado)
-Coconut lime chicken (rice, cilantro, lime)
-Chicken nachos (salsa, sour cream, refried beans)
-Beef and broccoli (rice)

-Gyoza (soy sauce or dipping sauce)
-Yakisoba (garlic, sauce, noodles, chicken, cabbage, celery, carrots)
-Hawaiian haystacks (celery, cheese, sauce & chicken, pineapple, mandarin oranges)
-Chicken pesto sandwiches
-Turkey roast (mashed potatoes, stuffing)
-Kielbasa and veggie bake
